How do I know kids will love this cold soup? Well, the other day I made it as an experiment and served it for lunch. Eve had a friend over. The next week I saw her friend’s mom and she asked me for the recipe. Her daughter told her she loved it!!!!

That, to me, is the best compliment there is. And when I showed her the recipe (written in pencil in my little notebook) she was shocked, shocked I tell you, at how easy it is. That made me even happier because I see one of my goals in life as making cooking simple and easy for everyone.

I do recommend sticking to one color of tomato—I mixed green, red and yellow tomatoes, and the color ended up being beige. I think it’s better if all the tomatoes are the same color.

Summer Gazpacho

Ingredients:

  • 5 large, fresh garden tomatoes (preferably all one color)
  • ¼ red onion, chopped
  • 1 small green or red pepper
  • 1 teaspoon salt (you can always add more to taste)
  • Olive oil

Directions:

1. Take the tomatoes and grate them using a cheese grater over a bowl (which removes the pulp from the skin.) This is the kind of grater I use.
2. Add that pulp to a blender or food processor (I have a Vita-Mix!)
3. Add the red onion, pepper, and salt, and blend until foamy and smooth.
4. Put the soup in a serving bowl and drizzle with olive oil.

Now, if I were serving this at a dinner party, I might add a nice garlic crouton or a garnish of herbs or something. But this is what I served the kids at lunch, and this is what they loved.

See…wasn’t that easy?

    I put it all in my food processor (skin on the tomatoes, still) instead of grating the tomatoes….and YUM! ♥ I love the simple recipes the best. My girls are 9 and 10 and I will make this again with them!
