Sometimes you want something as a side dish that is filling, satisfying, yummy, and just quick as can be. That would be couscous. What is couscous? It’s a teeny-tiny little pasta-like thing that originated from the food cultures of Africa and the Middle East. You can get mixes in the store and pay more for inferior taste, or you can make a quick and simple version at home that tastes much, much better and is more affordable. It goes with almost anything, and kids love it, too.

I really like the Shiloh Farms organic couscous, which I find at my favorite local health food store, Healthy Alternatives, in Trexlertown, PA.

Whole wheat couscous is the tastiest! Couscous is also a great way to add almost instant body to soups or stews.
