One recent weekend, I was thinking about breakfast and wanting some sort of bread, cheese, and egg mixture. But I was tired of just a fried egg on toast or a cheese omelet. I got to thinking about all the people I know who eat fried eggs on their burgers. My British son-in-law, for instance. It was like a lightbulb went off and an alarm of excitement sounded. Grilled cheese with a fried egg on top!

I couldn’t have possibly been the first person to think of this, but I’ve asked three or four people if they have ever heard of it and they haven’t. Have you? (Someone recently told me about the Croque Madame, which is like a grilled ham and Gruyère cheese with an egg on top.)

It’s possible to make it fairly healthfully and totally organically. And I guess you could eat this for lunch or dinner, too! Here is how I make it (for one):

Grilled Cheese with A Fried Egg on Top

  • 2 pieces whole grain organic sandwich bread
  • 1 slice Horizon Organic American Cheese
  • 1 organic egg
  • organic butter
  • organic olive oil
  • salt and pepper to taste

1. Cook the grilled cheese in butter in a cast-iron pan (do you need more info on this? It’s fairly basic). Butter is key. Just think of it as buttered toast with a cheese filling. Put it on a plate.

2. Fry the egg to your preference in olive oil in the same pan.

3. Put the egg on top of the grilled cheese. Add salt and pepper to taste and eat with a knife and fork. Well, I guess you could use your hands and fingers, but if you like your egg runny, as I do, using a knife and fork works best.

YUM!

Maria. We ave a very popular similar dish here in the good old UK. Welsh Rarebit is grilled cheese on toast and Buck Rarebit is the same with a poached egg on top – sometimes with spinach too. You can find this at many cafes in England! Here is one example

What a great idea! My kids love Muenster grilled cheese sammies; that would dress it up for dinner! 🙂 I discovered a wonderful food blog you would love–thefoodfreak.com. It’s 3 men who opened up a grilled cheese food cart in Brooklyn; it’s not your gramma’s grilled cheese. Also–I’m still boycotting Horizon (owned by Dean foods) and also Land O’Lakes (GMO alfalfa). My favorite new brand is Crystal Farms, and of course, Organic Valley butter. 🙂

It sounds wonderfull!!!. I from Spain and we used to make that sandwich with iberico ham. So good!!!.
I’m like you Karen, I don’t buy Horizon anymore. I have to check that brand Crystal Farms. Thank you

Yum! I love the idea of adding ham in, too. I’m out of eggs right now, but have SO been looking forward to the beginning of the new month so I can pick up more from my CSA. (Now that I’ve had farm-fresh eggs, I refuse to buy them from the grocery store…even though I really want eggs! Next round, I’ll be adding another carton or two to my monthly order.)
But that means I can make this tomorrow- thanks for the idea!

I have long made fried egg and grilled cheese sandwiches. I fry the egg first and put it with the cheese into the sandwich before grilling (in cast iron pan, of course.) If you fry the egg hard, it’s a great breakfast to go. They are also wonderful with homemade tomato soup.

I’m like Chris! We have been eating fried egg and cheese sandwiches since childhood. Still eat it for lunch, sometimes with freshly made tomato soup or chicken soup, yum!

I stopped drinking Horizon milk in the early 90’s. I remember there being a problem with the way that they treated their cows, and I couldn’t go for that, so I use sparingly, if at all, milk from Stoneyfield Farm or Back to Nature. Great products. Try them.

I forgot, now my Health food store carry quail eggs and heritage bird eggs. The color of the eggs are beautiful in the carton. Soft greens, blues, bright white, tan, cream and brown. Easter eggs all year round, and the yolks are such a beautiful dark yellow-orange!

Please excuse my error, it’s Natural By Nature milk and half-and-half.

I’m in Delaware too. At the Dutch Country Market here in Middletown, there is a brand of milk that is a throwback to another era! The problem with organic milk is that it is ultra-pasteurized, which kills basically everything good in milk. It’s more important to find a good quality LOCAL milk that uses “low-heat pasteurization.” Here’s more about it on the creamery’s website: http://www.tricklingspringscreamery.com/about-us/production.

I actually did the same thing, except to keep it low in calories… I used light bread, low fat cheese, sprayed the grill pan to cut down on oil, did not use butter and fried the egg in Teflon pan without oil. Yum and a fraction of calories.

My kids love a variation of this that we call Eggs in a Basket…you prep the pan like you’re making grilled cheese, but only use one slice of bread, and bite a hole in the center of the slice. Lay it in buttered pan and crack the egg into the hole. When it is almost finished cooking put some cheese on top to melt. It’s their number one favorite!
